I finally found a yummy cookie recipe. Really easy to make (which is always a bonus). I have made them several times (already) and they have been a hit every time.

You have got to try it!


2 Cups plain flour
1/2 teaspoon baking soda
1/2 teaspoon salt (not required if you use salted butter)
170 g unsalted butter, melted (I used salted butter)
1 cup packed brown sugar (only used 3/4 cup)
1/2 cup white sugar
1 Tablespoon vanilla extract
1 egg
1 egg yolk
2 cups chocolate chips (1 cup white, 1 cup milk chocolate)

Preheat oven to 165 degrees C (I had mine on fan bake)
Line baking tray with baking paper.
Sift together the flour, baking soda and salt and set aside.
In a large bowl, mix melted butter, brown sugar and white sugar until well blended.
Beat in vanilla, egg and egg yolk until light and creamy.
Add sifted ingredients until just blended.
Stir in the chocolate chips by hand using a wooden spoon.
Put in fridge for at least 15 mins (30 would be better).
Spoon onto baking tray.
Cookies should be about 8 cm apart.
Bake for 10-15 mins. It only took 10 mins in my oven (I had it on fan bake).
Place cookies on wire rack to cool.
